| Customer Reviews: Impressive results July 9, 2010 L. Callahan (Medford, OR) I have been on a gluten-free diet for years, and had used several kinds of flours, but never this particular one. I went for it and used it in a devils food carob cake recipe (mine). Kind of risky considering the flour is part garbonzo and part fava! But the cake is delicious. There is absolutely NO discernable bean flavor in the cake. The only reason I didn't give it 5 stars is that I haven't tried it in any other recipes yet. The quantity you get in this order is substantial, and easily stores along the back walls of my frig. Love it!
Celiac cook May 9, 2010 Donna G. Spencer (Chiloquin, OR USA) I buy a lot of Bob's Red Mill gluten-free products. I've been in their store, and they process the gluten-free items in a seperate area, away from the gluten products. I especially like the Garbanzo Fava Flour.

This product is a good less expensive substitute to Authentic Foods' Garfava, but as Bette Hagman pointed out: it's very different in flavor n texture. The recipes calling for garfava will work with this mix but it will come out more grainny and with very beanny smell and taste. I only use this mix to bake breads and muffins with other strong flavor ingredients such as bananas, chocolate, onions n Parmesan cheese to mask the bean flavor. I was always hesitant to buy the real garfava because not only it is more expensive but the shipping costs almost double the price, but once I baked with it, I was so pleasantly surprised how sooooo much better it tastes! I loved vanilla blueberry muffins when I used to eat wheat, but after I was diagnosed with Celiac spruce I couldn't find a GF flour mix that would produce a muffin that would taste good and be as fluffy as the wheat ones. This product produces breads and muffins with great consistency but the bean taste is too strong. For vanilla cupcakes, I have to use AF's garfava.

This is a great flour combination for gluten free recipes, including ones in Bette Hagman's Gluten Free Gourmet cookbooks. You still have to add other flours to it, such as tapioca, cornstarch, or arrowroot, and you need xantham gum, but the combination gives you an excellent start.
